The ‘No Salt’ Chef adds flavour to Donegal summer festivals

DONEGAL’s own Brian McDermott, ‘The No Salt Chef’, will host a number of delicious cookery demonstrations over the coming weeks at Ashtree Garden Centre’s Summer Fayre in Donegal town on Saturday, August 17 and the Taste of Donegal Food Festival in Donegal town from August 23-25.

In keeping with his signature cooking style, Burt native Brian will host demonstrations showing how to cook delicious healthy food.
A completely new concept to Ireland, ‘no salt’ cooking is becoming a high priority for many people across Donegal and the country.

Following his diagnosis with a chronic heart condition five years ago, Brian completely changed his life and cooking style, establishing a reputation for himself as ‘The No Salt Chef’, cooking great tasting, accessible and affordable food, without adding salt.

Salt is a high priority issue for Ireland, with the average daily intake for adults at 10 grams, well over the Recommended Daily Allowance of four grams.
Salt intake plays a critical role in regulating blood pressure, particularly important as Ireland has high mortality and morbidity rates from heart disease and stroke relative to other developed countries.

“I am looking forward to the upcoming food festivals celebrating Ireland and indeed Donegal’s wonderful produce. Not only am I privileged to share the stage with some fantastic local chefs, including my friend Neven Maguire at Taste of Donegal, I think the festivals are a great opportunity to showcase the best of the region’s fantastic home-grown produce and its award-winning restaurants,” said Brian.

“I demonstrate cooking with no hidden ingredients, letting the ingredients speak for themselves and instead of adding salt, I use herbs and spices that complement, but don’t overshadow the main dish. The dishes I present are healthy, don’t contain any added salt, and above all taste fantastic.”

Brian will host cookery demonstrations showcasing locally grown and produced ingredients and is also looking forward to judging local entries in baking and cooking categories at the upcoming Ashtree Garden Centre Summer Fayre.

He is also looking forward to demonstrating at Taste of Donegal and presenting a live children’s cookery competition, where Donegal’s ‘Young Chef of the Year’ will be crowned. Chef Brian McDermott is one of only a handful of Irish chefs with a Culinary Arts Degree, graduating top of his class.

Following a successful career in some of his native Donegal’s most lauded establishments and a senior global product development role in Kerry Group, Brian completely changed his lifestyle for health reasons and established a reputation as The No Salt Chef.

He is author of ‘Reunite with Food’, regularly works with award-winning chef, Neven Maguire, and presents his acclaimed cookery demonstrations across the country.
