Why did you become a chef?
I was working as a barman in the hotel industry 33 years ago and a friend of mine was going to Dublin for an interview for a chef position. I decided to tag along and 4 weeks later I found myself in Birmingham at catering college, and the rest is history!

What is your signature dish?
Chilled seafood platter – it’s my favourite dish to get artistic with and we’re known for our extravagant function displays.

What chef do you admire and why?
Marco Pierre White. He is the best in the industry and inspires generations of people in particular young chefs entering the industry.
