Name: Ciaran Sheridan
Business: Abbey Hotel, Donegal Town
Why did you become a chef?
I embarked on my culinary journey inspired by my mother. From the age of eleven, I began as a kitchen porter, gradually immersing myself in the art of crafting starters. Since that time, my passion for cooking has only grown stronger.
What is your signature dish?
Selecting a single signature dish can be quite the challenge for me since I find joy in experimenting and being inventive with my culinary creations. However, if I were to spotlight a seafood dish, I’d have to go with Halibut. It’s an extraordinary fish to work with, consistently yielding remarkable results. Nevertheless, our patrons also frequently rave about the Monkfish and Prawn Balti Curry.
What chef do you admire and why?
Marco Pierre White is a chef I greatly admire. His culinary creations truly speak for themselves, and his unique personality and passion for the culinary arts resonate with me, as I, too, share a bit of that same madness.
